Chewy Fatso Trail Mix Cookies (gf, vegan)

DRY INGREDIENTS:
1 cup gluten free oats blended into flour
1/2 cup almond flour or leftover almond pulp(can be subbed for more oats)
1/2 cup gluten free oats 
1/4 cup unsweetened coconut
1/2 cup slivered almonds 
2 tbsp pumpkin seeds
2 tbsp sunflower seeds
2 tbsp chia seeds
2 tbsp cocoa nibs 
1 tsp cinnamon 
2 scoops vanilla protein powder
2 tbsp enhanced collagen(optional) 
1/2 baking powder
1/2 tsp Himalayan pink sea salt 


WET INGREDIENTS:
1/4 cup melted Fatso
1/4 cup melted coconut oil 
FLAX EGG: 1 tbsp flaxseed mixed with 2 tbsp water (let sit for 5 minutes)
1/4 cup maple syrup 
1 tsp vanilla


DIRECTIONS:
Make flax egg. Mix all dry ingredients in a medium sized bowl. In another bowl mix all wet ingredients. Combine and bake at 350 for 15 minutes. Top with Yoso vanilla coconut yogurt mixed with  beetroot powder.
